Her Story

Erica Bentson isn't new to this. With over 25 years of experience as a pastry chef and two successful bakeries already under her belt, she knows what it takes to create something special. Her most recent venture, Whisk and Paddle in Gilbert, became a go-to destination for custom wedding cakes and celebration desserts before she sold it in 2023.

Now she's back — and this time, she's doing things entirely on her own terms.

Her Philosophy

4th Course Catering was born out of a simple belief: that dessert deserves to be elevated. Not just a cookie — a tahini chocolate chip cookie. Not just a pastry box — a curated experience. Erica brings the same level of craftsmanship and intentionality to every small-batch creation that she has throughout her entire career.

What She Creates

Based in Gilbert, Arizona, Erica specializes in refined desserts for private events, corporate gifting, and those everyday moments worth savoring. Her vision includes thoughtfully designed Afternoon Teas, curated Dessert Flight Boxes, and creative Dessert Pairings that bring together the worlds of pastry, coffee, and fine dining.

She keeps things simple — no mass production, no shortcuts. Just classic technique, modern flavor, and a deep respect for the craft.
